Survival and the nutritional and organoleptic qualities of the Northern shrimp under combined ocean change drivers

DOI

The dataset compiles survival data, muscle mineral content as proxy for nutritional quality and the taste, smell, texture, and appearance as proxies for organoleptic quality of the northern shrimp Pandalus borealis after an exposure of 30 days under laboratory conditions to different ocean global change scenarios of temperature (2, 6, and 10 °C), pH (7.75 and 7.4) and oxygen (100 and 35% relative to air saturation), in isolation and in combination. The data bundle includes: 1) Survival data, in which percentage of females still alive at the end of the 30 day exposure period are given, 2) Mineral content, in which content of shrimp muscle in Ca, Cu, Fe, K, Mg, Mn, Sr, Zn are given, 3) Organoleptic evaluation, in which scoring for organoleptic attributes (taste, smell, texture and appearance) are described and 4) Seawater parameters, in which physico-chemical parameters (oxygen concentration, temperature, pH, salinity, total alkalinity, dissolved inorganic carbon, partial pressure of carbon dioxide, concentrations of hydrogen carbonate and carbonate ions, saturation state of calcium carbonate and aragonite) are reported for the 30 day period for exposure.
