The database includes 954 food items in the rows. First two columns report identifiers (as defined in the BEDCA database; see http://www.bedca.net/) and names of food items. For each food item the table indicates contents of macronutrients in the last three columns (i.e. Carbohydrate, Protein, Lipid). Building blocks (i.e. simple molecules) composing macromolecules are listed in the other columns: (1) fatty acids (i.e. FA12_0 = C12:0, FA14_0 = C14:0, FA16_0 = C16:0, FA18_0 = C18:0, FA18_1 = C18:1, FA18_2 = C18:2, FA18_3 = C18:3, FA20_4 = C20:4, FA20_5 = C20:5, FA22_6 = C22:6); (2) Starch; (3) Fiber; (4) oligosaccharides (i.e. Glucose, Fructose, Galactose, Sucrose, Maltose, Rhamnose, Raffinose, Stachyose, Unidentified_carb1, Unidentified_carb2); and (5) amino acids (i.e. Isoleucine, Leucine, Lysine, Methionine, Cystine, Phenylalanine, Tyrosine, Threonine, Tryptophan, Valine, Arginine, Histidine, Alanine, Aspartic_acid, Glutamic_acid, Glycine, Proline, Serine). Also the concentration of Phosphorus is included. All contents are expressed as grams per 100 grams of edible portion, fresh weight.
