This dataset includes 6 files that compile organoleptic analysis data used in ProFuture H2020 project where it was studied the incorporation of microalgae (Spirulina and Chlorella Vulgaris) in energy bars as attractive food ingredients containing high-quality proteins and bioactive compounds. Specifically, in this dataset you can find data on: Physicochemical analysis (water activity and content, color measurements, instrumental texture), nutritional properties and sample description/formulation of energy bars enriched with 4 different types of microalgae (Smooth, Honey, White Chlorella and Spirulina) at two different inclusion levels (2.5 and 5%).
